Persian Chickpea Cookie Recipe – Vegan!

Growing up in a Persian household, there are so many cookies and biscuits to have with tea. Out of like a million, I would say these are in my top 3 favorites for Persian cookies. And the best part? It’s vegan and DELICIOUS! The main ingredient is chickpea, and these honestly, once ready, melt in your mouth! (literally).

So – I won’t give you a whole story like a lot of others do before you reach the recipe, I can go ahead and give all that information after.

What You Will Need:

1/2 cup of vegetable oil

3/4 cup confectioners’ sugar (powdered sugar)

1 teaspoon finely ground cardamom

1/2 teaspoon of rose water

1 and 3/4 cups of fine chickpea flour

2-3 tablespoons of chopped or ground pistachios

How To Make It: First, you will get a bowl and combine the oil, sugar, cardamom and rose water. Using a hand mixer, mix it on medium for 2-3 minutes, until it is light and creamy. Then, slowly start adding the chickpea powder through a sift into the bowl and beat it on low for about 1 minute until the dough is no longer sticky. Then, dust your surface with some of the chickpea flour and knead the dough for about 10 minutes, until it is more workable – the dough is going to be super crumbly. Once you have the right consistency, tightly wrap the dough in plastic wrap and set it aside for 2 hours. DO NOT REFRIGERATE.

Once you are about to reach hour 2, preheat the oven to 300 F and line your backing tray with parchment paper. Roll out the dough on a dusted work surface – until it’s about 3/4 inches thick. Use a cookie cutter that is 1-inch (I have used both clover and hearts when making these), and cut the dough. Place them on the baking tray about 1 inch apart from one another. keep re-rolling and repeat until you run out of dough! Once you finish your dough, sprinkle the chopped/grated pistachio onto the top of each cookie!

Place the baking tray in the middle rack for 15-20 minutes, they should turn into a golden color! Once done, remove the cookies from the oven and let it cool on the tray for a couple of minutes – then carefully move them to a wire rack to completely cool down. Also – be careful! They will crumble very easily!

Once cooled down – enjoy them !!

This is how mine turned out the last time I made them! So delicious and addicting, so be careful! haha.
